Understand the three basic methods\u2014washed, natural, and honey\u2014before moving on to anaerobic, inoculated, and co-fermented coffees, and you\u2019ll read coffee labels with much more confidence.<\/p><p><a class=\"mcs-button\" href=\"\/en\/colombia-coffee-project\/\">Back to Colombian Coffee \u2192<\/a><\/p><\/section><section class=\"mcs-band\"><div class=\"mcs-shell\"><p class=\"mcs-kicker\">Start with the Core Concepts<\/p><h2>Processing doesn\u2019t dictate a single flavor<\/h2><p>Processing removes the seeds from coffee cherries and dries them into stable green beans. Each method keeps or removes different amounts of fruit, mucilage, and fermentation influence, changing aroma, the balance of acidity and sweetness, and mouthfeel.<\/p><p>Processing is not a guarantee of quality. Ripeness, picking and sorting, fermentation management, drying, storage, roasting, and brewing all shape the final flavor.<\/p><\/div><\/section><section class=\"mcs-shell mcs-section\"><p class=\"mcs-kicker\">Three Basic Methods<\/p><h2>Washed, Natural, and Honey<\/h2><div class=\"mcs-cards\" style=\"padding-bottom:12px;\"><article class=\"mcs-card\"><span class=\"mcs-num\">Washed\/Lavado<\/span><h3>Fruit removed before drying<\/h3><p>The skin and most of the fruit are removed first; the mucilage is then removed by fermentation or mechanically, and the beans are washed and dried.<\/p><p><strong>Process at a glance:<\/strong>Picking and sorting \u2192 Pulping \u2192 Removing mucilage and washing \u2192 Drying.<\/p><p><strong>In the cup:<\/strong>Clean, with clear acidity and easily distinguishable flavor layers.<\/p><\/article><article class=\"mcs-card\"><span class=\"mcs-num\">Natural<\/span><h3>Dried in the whole cherry<\/h3><p>Whole coffee cherries are dried intact; afterward, the dried skin, fruit, and parchment are removed.<\/p><p><strong>Process at a glance:<\/strong>Picking and sorting \u2192 Drying whole cherries \u2192 Hulling.<\/p><p><strong>In the cup:<\/strong>Ripe fruit, dried fruit, and a fuller body; when done carefully, it can also be clean and clear.<\/p><\/article><article class=\"mcs-card\"><span class=\"mcs-num\">Honey \/ Enmielado<\/span><h3>Dried with mucilage<\/h3><p>After removing the skin and most of the fruit, some or much of the mucilage is left on, and the seeds dry together with it.<\/p><p><strong>Process at a glance:<\/strong>Picking and sorting \u2192 Pulping \u2192 Drying with mucilage \u2192 Hulling.<\/p><p><strong>In the cup:<\/strong>Round sweetness, fruity aroma, and a fuller body; the name does not mean honey is added.<\/p><\/article><\/div><p class=\"mcs-note\">The key to a \u201cnatural\u201d process is drying the whole cherry. Adding cultures is not the same as adding fruit, juice, or flavorings.<\/p><\/article><article class=\"mcs-card\"><span class=\"mcs-num\">Co-fermented<\/span><h3>Fermented with added ingredients<\/h3><p>In the market, this term usually describes fermentation with added fruit, juice, or other ingredients.
